Adding the multiple parameter to a template lets you use multiple instances of this template’s (or none) in the form and thereby also in the generated page.

The sample form below, for the Item form, contains two such templates.

If you look at the form that this definition generates, you will notice that there are two buttons labelled: Add another. Clicking on either of these buttons will create a new instance of that template and its field(s).
