The format of the XML file you get is always the same. It is coded in XML Schema as seen in: http://www.mediawiki.org/xml/export-0.3.xsd This format is not meant to be viewed in a web browser.
Some browsers show you pretty-printed XML with "+" and "-" links which reveal or hide the selected parts respectively. The XML-source may alternatively be viewed using the browser’s "view source" feature or even with a program of your choice once the XML file is saved locally.
As you read the XML source directly, one can easily find the actual wikitext.
If you don't use a special XML editor, "<" and ">" will appear as <and > respectively. Additionally, "&" is coded as "&" This helps avoid any conflict with the XML tags and also to avoid any ambiguity.
In the current version, the export format does not contain an XML replacement of wiki markup. This means that you will only get the wikitext similar to the one you get when editing the article.
